Charcuterie Salad

Beach eats. Most people think of chips, sandwiches and soda (or just “coke” as we call it in the south. When spending a day in the sun, your best bet is to eat foods that are anti inflammatory and will help your skin protect and repair itself from the sun exposure.

My current favorite beach meal is a charcuterie salad. All the aspects of my favorite charcuterie board but easier to manage on a sandy, windy beach. Plus, it’s easy to personalize to to your tastes and whatever you have on hand.

Here are the basics:

Make your base something green (mixed greens, spinach, kale)

Top with your favorite charcuterie ingredients.

I like Applegate turkey pepperoni but deli meat or prosciutto would be great additions.

Then I add carrots, sprouts, kalamata olives & radishes but sweet foods like some dried fruit or sliced apples or grapes would be delicious, too.

To too it off, I added a good quality hummus (no canola oil!) but if you wanted a Whole30 compliant meal you could use your favorite compliant dressing (like Tessemaes balsamic or ranch).

Not pictured is my side of Simple Mills crackers (omit for Whole30) for a little crunch.
